CLIMATE: Dry and continental with great sun exposure allowing perfect ripening
VINE CULTIVATION: Vertical shoot position trellising. Harvest details: by hand in 15kg bins, picked between March 25th to April 10th, yield: 8 Ton/Ha
VINIFICATION: Grapes were destemmed and crushed. 100% cold maceration before fermentation and delestages. 15 days of fermentation in stainless steel tanks at 25 – 29ºC. Maceration after fermentation. Natural malolatic fermentation.
AGEING PROCESS: In French and American oak barrels for 24 months. Bottling ageing for 12 months
COLOUR: Purple red with blue tones
AROMAS: Plenty of ripe and soft red fruits, notes of vanilla, and coffee
PALATE: Powerful on the palate with elegant tannins
ALCOHOL CONTENT: 14.00% Vol. (20ºC)
TOTAL ACIDITY: 5.10 g/l tartaric acid
RESIDUAL SUGAR: 1.90 g/l
SERVING TEMPERATURE: 16 – 18ºC
PAIRING: Enjoy it with pasta in spiced sauce, grilled wild red meat andhard cheeses.
